Abstract

•Up to date overview of current applications in the dynamic filed of proteomics in Food Science.•Proteomics approaches are of growing interest in food authenticity for a huge variety of different foods. Novel approaches and strategies for food authentication are presented.•Investigation of processing-induced modifications of food increasingly benefits from mass spectrometry-based proteomics and different approaches are highlighted.•Different aspects of Food safety addressed by Proteomics are presented.
